Easy Paleo Pesto - Basil Avocado Pesto (Vegan, Paleo, Whole30)

BASIL AVOCADO PESTO RECIPE

Time: 10 min or less

Ingredients:

  • 3 cups fresh spinach

  • 1-2 drops DoTerra Basil Essential Oil or 2 cups fresh basil leaves

  • 1-2 cloves garlic (minced or fresh)

  • ½ teaspoon sea salt

  • 1 teaspoon lemon juice

  • 1 ripe avocado

  • ½ cup extra virgin olive oil

  • ¼ cup pecans, pistachios, or pine nuts (optional)

[For a creamy veggie dip- option to add 1 can of full fat coconut cream.]

INSTRUCTIONS

  1. Place spinach, garlic, nuts, basil (oil or leaves), and lemon juice in a blender or food processor and process until finely chopped.

  2. Add Avocado and Extra Virgin Olive oil. Blend

  3. Use right away or transfer to a jar, cover with thin layer of olive oil to store in a refrigerator (keep avocado seed for storage and extra lemon juice to keep fresh)

  4. To freeze the pesto, put the pesto into ice cube trays. Freeze until solid, then transfer cubes to a freezer bag for up to 3 months.
