Shrimp + Dill Cucumber Bites

SHRIMP + DILL CUCUMBER BITES

INGREDIENTS

  • 24 Shrimp Peeled and Tails Off

  • 1 Cup Plain Greek Yogurt

  • 1 TBPS Dill, Fresh

  • 1 tsp Lemon Zest

  • 1/4 tsp Salt

  • 1-2 Cucumbers, Large, Sliced

INSTRUCTIONS

  1. Bring a pot with a small amount of water to a boil.

  2. Place shrimp in a steaming basket and place it in the pot.

  3. Steam shrimp for about five minutes or until fully cooked.

  4. Remove shrimp from pot and let cool.

  5. In a large bowl with an airtight lid mix together the Greek yogurt, dill, lemon zest and salt.

  6. Add shrimp to the sauce and toss until thoroughly covered. Place the lid on the bowl and store in the refrigerator for at least one hour (overnight is best if possible).

  7. Slice cucumbers and place one shrimp on each cucumber. Serve immediately.
