Dairy-Free Pistachio Ice Cream
Winter is over and the heat and humidity in Mobile are rearing their heads. Nothing better than to cool off with some pistachio ice-cream without the guilt or bloat! This easy pistachio ice-cream is dairy-free and doesn’t require an ice-cream maker. There is no churning involved whatsoever!
[It is so easy, and makes the perfect green dessert for St. Patty’s Day.]
Prep Time: 10 min or less
Cook Time: 4 Hours
INGREDIENTS
1 1/2 cups coconut water [or a non-dairy milk of your choice]
3/4 cup raw unsalted pistachios [pre-soaked in water for 1-2 hours]
1/4 cup raw cashews [pre-soaked in water for 1-2 hours]
2 Ripe Avocados
1 Small Ripe Banana [fresh or frozen]
2 Heaping Handfuls Spinach
3/4 cup Maple Syrup
2 Teaspoons Vanilla Extract
1/2 Teaspoon Pure Almond Extract
1/4 Teaspoon Salt
Optional Protein Boost: Vegan/Paleo Protein Powder [Vital Protein's Collagen Peptides]
INSTRUCTIONS
Place all ingredients, except raw pistachios in a blender or Vitamix
Add pistachios and blend until everything is very smooth [pause and scrape sides if needed]
Transfer into a freezer-friendly container of your choice [Sprinkle with pistachios on top] [Line with parchment paper for easy clean and scooping]
Place in the freezer to chill for at least 4-5 hours or overnight.
Scoop out and enjoy!
*For instant soft serve: Swap out ½ a cup of the coconut water/nut milk for ice cubes and use a frozen banana.
