[Crockpot Chicken Taco Soup]
Tis the season for comfort food, and this Crockpot Chicken Taco Soup recipe from Health Coach, Samantha LeMond [@lemondelish] will warm your belly and your soul! It’s a dump-and-go recipe that you can put in the pot and forget about until dinner time.
Ingredients
1lb chicken breasts
1 can diced tomatoes
1 can drained corn
1 small can diced green chiles
1 packet taco seasoning
1 can chicken broth
1 can enchilada sauce
1 tbs minced garlic
1 cup water
1 diced onion
Optional: sour cream (fat free plain Greek yogurt), fresh cilantro, avocado, shredded cheese
Instructions:
Place all contents into crockpot and cook on low for 4-6 hours. Shred chicken breasts and stir contents. Serve with optional toppings.
